The Kai Seki Magoroku Hekiju Deba 15cm is often used as an axe in Japanese traditions, but was also designed to carry out detailed tasks. You use the front part of this heavy but stable knife for filleting, the back part for cutting bones and tendons. With its imposing blade, this knife certainly stands out in the kitchen, but it is still very pleasant to work with.
Blade: Unique technologies are applied in producing the blade of the Seki Magoroku Kinju and Hekiju knife series, making it possible to create the demanding, pointed cutting edges of traditional Japanese kitchen knives. They are ground on one side, which guarantees an optimal and straight cut. Maximum blade sharpness is achieved by the highly precise processing of the cutting edge.
